Arugula salad with smoked salmon, mango and avocado

Recipe ingredients

  • 1 cup rocket leaves (arugula)
  • 2 cups mixed green salad
  • The green part of 2 scallions
  • 2 tbs chopped fennel
  • 2 tbs sesame seeds
  • 150gr smoked salmon
  • ½ mango
  • 1 avocado


  • ¼ cup olive oil
  • The juice of ½ lime
  • 1 tbs balsamic vinegar
  • 2 tbs molasses or honey
  • 1 tsp mustard
  • Salt to taste


In a small dry pan, toast 2 tablespoons of sesame seeds over medium flame until lightly brown. Set aside to cool down. Wash and dry the rocket leaves and the green salad. Chop the scallions, mango and avocado.

Halve a lime and squeeze the juice into a small bowl. Then add olive oil, balsamic vinegar, molasses or honey, mustard and salt to taste. Whisk until it emulsifies.

In a salad bowl, toss together the rocket leaves, green salad, chopped scallions, fennel and sesame seeds. Add the smoked salmon, mango and avocado. Drizzle evenly with the vinaigrette, and toss until the salad is combined and evenly coated. Serve immediately!
