Chocolates with walnut and tangerine
A very easy dessert that will delight you!!
Serves: 30 pieces
Preparation time: 30 minutes
Cooking time: 10 minutes
Difficulty level: Easy
Cost: Quite expensive
Materials:
- 5 large tangerines
- 150 ml fresh tangerine juice
- 150 gr. sugar
- 150 gr. chopped walnuts
- 20 gr. cocoa
- 50 gr. breadcrumbs
For the icing
- 400 gr. couverture
Procedure:
Grind the walnuts moderately.
Wash the tangerines well.
Squeeze them and extract their juice.
Then we remove their skins, grind them in the mixer and put them in a saucepan with the sugar and juice to boil over medium heat.
Stir from time to time with a wooden spoon.
Let them boil well, until it becomes like a tight jam and our mixture for chocolates with walnuts comes off the pot, for about 10 minutes.
Let the mixture cool a bit.
Add the ground walnuts, breadcrumbs and cocoa.
We mix them with a spoon. After the mixture has cooled and we can shape it, we take a piece the size of a walnut and shape it into a ball or stick or whatever shape we want. Every time, before we take a piece of the mixture, we dip our fingers in the cognac.
Lay out the balls on a greased tray or parchment paper, and let them dry well.
Melt the chopped chocolate in a bain-marie.
One by one, drop the balls carefully into the bain-marie in the melted chocolate.
Take them out of the bain-marie using a fork and spoon.
Put them on a greased tray (or on parchment paper).
Let the chocolate dry and harden.
Keep them in an airtight utensil in the refrigerator. Enjoy!!
